Vegan Pesto, Mushroom and Walnut Pasta Sauce

We love pasta – normally we use Sainsbury’s gluten free which is excellent.  This is a pasta sauce that came to life out of sticking our heads into the fridge and deciding to jazz up some Vegan Pesto.   So…Vegan Pesto, Mushroom and Walnut Pasta Sauce was born. Its quick, delicious and makes a great supper or weekend lunch. Sacla’s Vegan Pesto Sauce is one of those products we always keep in the cupboard. I’m sure there are lots of people who make their own, but we don’t!

Vegan Pesto, Mushroom and Walnut Pasta Sauce

One of our favourite lunches. We love Sacla's Vegan Pesto - so easy to jazz up.

Ingredients
  • Serves 2
  • 250g Gluten Free Pasta - we use Sainsbury's
  • 5 tbsp Sacla Vegan Pesto
  • 1/2 cup sliced mushrooms
  • 1/4 cup walnut pieces
  • 1/4 cup hazelnut pieces
  • 1/2 cup chopped courgette
  • 1/4 cup chopped olives
  • 1 garlic clove crushed
  • 1/2 onion sliced
Directions
Step 1
Pop a pot of hot water on the stove, add a bit of salt, and have it ready to add the pasta to
Step 2
Grab a frying pan and fry the onion in a tablespoon of olive oil until lightly coloured
Step 3
Add in the courgette and mushrooms and fry until lightly coloured
Step 4
Add in the garlic, olives and pesto
Step 5
Heat through, stir and allow to sizzle on a low heat
Step 6
Add the pasta to the pan and bring to the boil, keep the lid off and boil for 8-10 minutes (do read the package to check timings)
Step 7
Drain, return to the pan and mix in the sauce
Step 8
If you like sprinkle with grated Vegan cheese.
