Vegan Oatmeal Raisin Cookies

Vegan Oatmeal Raisin Cookies

I love oatmeal cookies, traditionally a bit less sweet than other cookies so they really appeal. These Vegan Oatmeal Raisin cookies hit the spot nicely – soft, chewy and with a bit of sweetness from the raisins.  The ‘shortening’, or Trex, adds the chewiness but you can make with just dairy free margarine if you can’t get Trex (or similar).

Free From: Dairy, Eggs, Nuts

Contains: Wheat

Preheat oven to 180°C, 350°F

Vegan Oatmeal Raisin Cookies

These are a soft and chewy oatmeal cookie. A nice change from sweeter biscuits, but if you prefer you could replace the raisins with chocolate chips. Preheat oven to 180°C, 350°F

  • 1/4 cup dessicated coconut
  • 2 1/4 cups big oats

  • 1 tsp baking soda
  • 1 tsp cinnamon
Directions
Step 1
Cream the sugar and fats together until fluffy
Step 2
Add in the golden syrup, vanilla and cinnamon and give it a good mix to incorporate it with the creamed sugar mixture
Step 3
Add in the flour, raisins and oats and mix until you have a pretty stiff batter
Step 4
Using a teaspoon shape the batter into balls and flatten slightly
Step 5
Space them on a greased baking sheet and bake for 8-10 minutes until golden on the bottom
Step 6
Cool on a wire rack.

Coriander Chicken

Grilled Coriander Chicken

Summertime is when simple meals are a good idea. No slow cooked casseroles, or heavy meals. We like lighter food in the summer, marinated and grilled on the BBQ under under the grill in the oven. This dish fits the bill perfectly, simple, fast and packed with citrus and coriander.  Simple and packed with citrus […]

Vegan Fudge

Vegan Fudge

I love fudge, its such a great candy.   Our other recipe creates a lovely fudge, but it’s a harder consistency. This one is softer, and easier to make.  Its very quick, and you can add in nuts, raisins, or flavourings such as mint, or orange if you like. A quick and delicious fudge, with a […]
