We love pasta, its quick, easy and makes the perfect mid week meal. This Vegan Courgette and Lemon Pasta is a great summer dish – light and fresh. We often eat gluten free pasta, and think Sainsbury’s is the best gluten free pasta out there. For our Vegan Courgette and Lemon Pasta we used wheat Pappardelle, but you can use any pasta you like. For this recipe we’ve added in Edamame Beans, but if you don’t have those to hand then just substitute with some peas – it will be just as delicious.
