Cinnamon is one of my favourite spices, I really love it in baking. This is a lovely Vegan Cinnamon Cake, with some shaved Vegan Chocolate added into the middle layer of Cinnamon Sugar which is a great addition. Browning the Vegan Butter adds a depth of flavour. Its simple to do, and very much worth it.
The combination of the Browned Butter, plus the Dairy Free Yoghurt makes this cake super moist…if you don’t fancy adding Vegan Chocolate to the middle layer you could add in some Orange Zest instead. Either way this is a fab Vegan Cake that doesn’t need icing to be delicious.
Vegan Cinnamon Cake
Ingredients
Cake
- 1 Cup Dairy Free Milk
- 1 Tbsp Apple Cider Vinegar
- 3/4 Cup Dairy Free Butter
- 3/4 Cup Brown Sugar
- 1/2 Cup Dairy Free Yoghurt
- 1 Tbsp Corn Flour
- 2 1/2 Tsp Baking Powder
- 1 Tsp Vanilla Paste (you can use extract if you like but the paste does have a better flavour)
- 1 Tbsp Ground Flax with 1 Tbsp of Water whisked in
Cinnamon Sugar - Inner Layer
- 1/2 Cup Soft Brown Sugar
- 3 Tbsp Cinnamon
- 1 Tbsp Grated Vegan Dark Chocolate
- 3 Tbsp Vegan Butter
- 1/2 Cup Plain Flour
Cinnamon Sugar - Top Layer
- 1/2 Cup Soft Brown Sugar
- 2 Tbsp Cinnamon
- 3 Tbsp Vegan Butter
- 1/2 Cup Plain Flour
Instructions
- Preheat the oven to 180℃, 360℉. Grease and Flour a cake tin.
- Add the Apple Cider Vinegar to the Dairy Free Milk and |eave to one side. Add the Vanilla.
- Take the Vegan Butter and put into a frying pan and melt. Heat till it starts to brown, and put to one side to cool.
- Mix the Flour, Corn Flour, Baking Powder together.
- Whisk the Brown Sugar together with the cooled browned Vegan Butter. Add in the Flour mixture a large spoonful at a time. Once combined, pour in the Dairy Free Milk mixture.
Cinnamon Sugar
- In two separate bowls mix the Sugar, Dairy Free Butter, Cinnamon and Flour together. Add the grated Chocolate to one of the bowls and use that mixture for the middle of the cake.
- Pour half the cake batter into the prepared tin, sprinkle the Chocolate Cinnamon Sugar evenly across the cake. Pour the rest of the batter on top, and sprinkle with the plain Cinnamon Sugar.
- Bake for 30-35 minutes, or until the edges pull away a bit from the side and a toothpick comes out clean. Cool on a wire rack and keep in an airtight container for 4-5 days.
