Vegan Breakfast Pancakes

These are a weekend treat for us. Vegan Breakfast Pancakes topped with dairy free margarine, maple syrup and fruit of choice. Of course if you want to go wild you can put some vegan whipped cream on top too. Our Vegan Breakfast Pancakes have oats and banana in them as well, so they are substantial enough to fuel your morning!

Vegan Breakfast Pancakes

Perfect for a Saturday morning treat - add fruit and whipped cream if you want something truly indulgent for breakfast.

Ingredients
  • 1/2 cut oats
  • 2 cups self raising flour
  • 1 small ripe banana mashed up
  • 1 1/2 tsp baking powder
  • 1 tsp apple cider vinegar
  • 1 tsp granulated sugar
  • 2 cups dairy free milk
Directions
Step 1
In a large bowl mix all the dry ingredients together
Step 2
Add in the cider vinegar, the banana and the dairy free milk
Step 3
Mix with a wooden spoon until you have a thick batter – if you’re adding fruit then add to the batter now and mix carefully so you don’t smash it up
Step 4
Add some dairy free butter to a frying pan and heat til bubbling (medium high heat on the stove)
Step 5
Pour 1/3 cup of batter into the pan and fry until bubbles show through the middle of the pancake, flip and cook til golden on the other side
Step 6
If you add fruit (Raspberries or Strawberries) do make sure you cut it up (except blueberries!) so that the pancakes aren’t crazy lumpy
Step 7
Serve with dairy free margarine, maple syrup and whipped vegan cream if you wish.
