My mother use to make date squares when I was young, but I find them too sweet now. I prefer something a bit tarter, so we have our recipe for Vegan Apple Oat Square, A touch of cinnamon and nutmeg make this a lovely bar to snack on. Vegan Apple Oat Squares are a nice, not too sweet, alternative to cake!

Preheat Oven to 350°F, 180°C
Vegan Apple Oat Squares

Ingredients
- For the Apple Mixture:
- 5 crisp Apples, peeled, cored and chopped into small dice
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/4 cup soft brown Sugar
- 1 tbsp Cornstarch
- 5 tbsp Water
- For the base and top:
- 1/2 cup Dairy Free Margarine
- 1/4 cup Vegetable Fat such as Trex
- 1 cup Brown Sugar
- 1 3/4 cup Plain Flour
- 1/2 tsp Baking Soda
- 1 1/2 Cups Oats
Directions
- Step 1
- Preheat Oven to 180°C, 350°C
- Step 2
- Line a baking tin with parchment on the bottom and grease the tin
- Step 3
- Add the diced Apples to a pan with a lid, mix in 1/4 cup Brown Sugar, Corn Starch, Cinnamon, Nutmeg and Water.
- Step 4
- Mix so the Apples are covered and leave to simmer on a low heat for 25 minutes or so. You will need to mix the Apples from time to time. You want the Apples soft, but not mushy.
- Step 5
- For the base and top mixture cream the fats and 1 cup Brown Sugar
- Step 6
- Mix in the Corn Starch, Baking Soda, Flour and Oats
- Step 7
- Press about half the mixture into the bottom of the prepared tin, but don’t press too hard or the base will be tough
- Step 8
- Add the Apple mixture on top, and then crumble the rest of the oat mixture on top of the Apples
- Step 9
- Press down lightly and bake for 20-25 minutes
- Step 10
- Cut while still warm.
