Stir Fry

Chicken Stir Fry is a kid friendly, quick and healthy meal. Add in coconut rice and everyone’s happy.  The great thing about stir fry’s is that you can adjust the vegetables to suit everyone’s tastes. Molly hates peppers so we don’t add them to stir fry’s as they are a strong taste that ‘infects’ the rest of the dish.  But do add them in if you like. Equally we’re not great with spice due to Reflux so we don’t have chilli’s in this dish so for flavour we stick to a bit of Teriyaki or Hoisin sauce and ginger to add a bit of heat.  Cooking time really depends on the size of the vegetable and chicken slices. Try to keep them a similar depth as it makes cooking a bit easier.

Chicken Stir Fry

Quick, easy and full of veg. A great way to feed kids and when served with Coconut Rice its perfect.

Ingredients
  • 2 chicken breasts, sliced into bite sized pieces
  • 1/2 onion, sliced
  • thumb sized piece of fresh ginger peeled and diced
  • 2 tbsp Teriyaki Sauce
  • 2 tbsp Soya Sauce
  • 2 cloves minced garlic
  • 1/2 courgette sliced
  • 100g of sliced mushrooms
  • 50g sugar snap peas
  • 50g sliced cabbage
  • if you're after some colour add in 1/2 sliced red pepper, or a carrot slice up thinly
  • 2 tbsp oil
Directions
Step 1
Grab a large frying pan or wok if you have it, pop onto a medium heat and add the oil
Step 2
Stir fry the onion for a few minutes until translucent
Step 3
Add in the chicken and stir fry until cooked – about 5 minutes depending on how big your pieces of chicken are – I always cut open a largish piece to check on cooking status
Step 4
Add in the garlic and the ginger and fry for a minute or two
Step 5
Then add in the Soy sauce and the Teriyaki sauce (sometimes we use Hoisin instead, or just Soy Sauce with a tablespoon of honey stirred in)
Step 6
Now add the mushrooms and fry for 2-3 minutes, if you’re adding in carrots and peppers add them in at the same time as the mushrooms
Step 7
The sugar snap peas, courgette and cabbage go in last as they cook quite quickly. We like our sugar snap peas quite crisp so they are only in the pan for 3-4 minutes.
Step 8
Serve straight away with Coconut Rice.
