Simple Chia Pudding

Our Simple Chia Pudding is the simplest, easiest, most delicious breakfast (okay…apart from pancakes) that you can have ready for you in the morning to make breakfast fast and easy.  To be honest, it’s all about the toppings. I was being lazy and just went for fresh fruit and some sugared almonds but you can layer in all manner of fruit (apples, peaches, pears, strawberries, mango’s) either just chopped up or cooked for a few minutes with a tablespoon of sugar and a dash of water to make a compote.

Chia Pudding by AllergyMums Add some vanilla if you like, or dessicated coconut or even some chocolate if you wish.  I’ve added in some sugared almonds here, which are dead simple to make.   You can check out our recipe here: Sugared Almonds.

Simple Chia Pudding Allergy Mums

Making our Simple Chia Pudding in the evening takes about 5 minutes – and then you are ready to go first thing in the morning!  Chia seeds are getting lots of attention – this is because they are a great source of protein and calcium so are great for dairy free or vegan folk.  If  you aren’t vegan, then you can use honey if you wish. I’ve used Maple Syrup so it’s vegan friendly.

Ingredients
  • 1 cup non-dairy milk. We use Coconut, or Oat
  • 4.5 tbsp of Chia seeds
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla if you like
Directions
Step 1
Grab a spare jar, or small bowl
Step 2
Mix all the ingredients together and refrigerate for at least 2 hours, preferably overnight
Step 3
Add fruit and enjoy
