Parma Ham Wrapped Cod and Spicy Lentils

Cod isn’t just for covering in batter and deep frying, it’s a lovely fish and very quick to cook. We wrap it in Parma Ham and roast it for 15 minutes in a hot oven – add in spiced lentils and it’s a wonderful dinner. The salty Parma Ham combines beautifully with the meaty cod. Roast Cod with Parma Ham is a great Friday night dinner and is dairy free.

These spiced lentils are a lovely accompaniment – a great source of protein, and perfect with fish. This is a very filling dish, so there is no need for rice or potatoes. You could, of course, if you wanted add in some mashed potato on the side but it’s not needed. We add Kale, or sometimes Spinach to the lentils so in terms of vegetables a side salad would do nicely.

Parma Wrapped Cod with Spiced Lentils

Cod is a great fish - meaty enough to take the saltiness of the Parma Ham. Add in some spiced lentils and you've a delicious meal.

Parma Ham Wrapped Cod and Spicy Lentils Allergy Mums
Ingredients
  • 1 portion of cod per person
  • 2 slices Parma Ham per piece of Cod
  • For 4 people:
  • 1 cup green lentils
  • 1/2 onion
  • 3 cloves garlic
  • 1 inch fresh ginger - peeled and grated
  • 1 tsp ground Cumin
  • 1 tsp ground Paprika
  • 1 tsp ground Coriander
  • 1/2 Kale cut into slivers, or 1 cup baby Spinach
  • 2 cups vegetable stock
Directions
Step 1
Fry the diced onion in a bit of oil until a little brown at the edges
Step 2
Add the spices and cook for a few minutes
Step 3
Grate in the fresh Ginger
Step 4
Add the lentils and stock and set on a low heat to simmer for 25 minutes
Step 5
Preheat your oven to 200°C 400°F
Step 6
Wrap each piece of cod in two pieces of Parma Ham. Using one slice to overlap any bit of the fish that isn’t properly covered by the first slice
Step 7
Place on a lightly greased baking sheet and bake for 15 minutes until the flesh turns white
Step 8
During the last five minutes of the cooking time for the lentils add in the Kale or Spinach (to be honest I like Spinach to be very lightly cooked – so 2 minutes does nicely for Spinach in my view. I just add it in as I’m getting ready to serve so it just wilts a bit
Step 9
To serve spoon the lentils onto a plate and place a piece of cod on top

    Great recipe, really enjoyed the flavors and the straightforwardness of everything. Will be making this one again. Ended up using halibut and prosciutto, which came out really well.
