Marinated Lamb

Marinated Lamb

Lamb is one of our favourite meats, be it roast, slow cooked shanks or this marinated lamb which is cooked quickly for about 20 minutes so that it comes out pink.  It’s a lovely marinade, and served with red rice, flatbreads and some hummus it makes a great meal.  Just click on the picture of the flatbread or hummus and you’ll jump to the recipe!

Marinated Lamb

Marinated Lamb is a lovely dish - make a quick marinade and then cook it in a hot oven for about 20 minutes. Served with flat breads and hummus it's a lovely meal.

Marinated Lamb Allergy Mums
Ingredients
  • 1 kilo Lamb diced
  • 2/3rds cup of non dairy yoghurt (we use coconut)
  • 4 cloves Garlic crushed
  • 1 inch fresh Ginger, peeled and grated
  • 1 tsp ground Cumin
  • 2 tsp Sea Salt
  • 1 inch fresh ginger, peeled and grated
  • 1 tsp Cumin
  • 2 tsp Sea Salt
  • 2 tbsp Garam Masala
Directions
Step 1
Grind the garlic, sea salt and fresh ginger together in a pestle and mortar or small bowl
Step 2
Mix with the yoghurt, Cumin and the Garam Masala
Step 3
Cover the diced lamb with the yoghurt mixture and marinate for at least 3 hours
Step 4
Pre-heat your oven to 400°F 200°C and cook the lamb for 15 minutes. For the last 5 minutes switch to the grill and put the lamb high in the oven to brown the edges a bit. Serve with hummus and flatbreads.
