Fried Kale with Pine Nuts and Chilli

Kale is a great vegetable, we grow it in our garden along with courgettes and beans.  We love Fried Kale and Pine Nuts and Chilli as a side dish with roast dinner.  This year we’ve had a bumper crop, despite having to fight off the pigeons!. We’ve only a small garden, so the flowers take a bit of a back seat so that we can have courgettes, beans and kale through the summer. Sadly our spinach didn’t take off this year, but we’ll try again next summer. In the meantime, we love Fried Kale with Pine Nuts and Chilli.  Do increase the amount of chilli if you like a bit more spice, we tend to go light on the chilli.

We also love courgette – and the plants have produced a huge crop. We’ve gone for Courgette Cake and Courgette Fritters to use the courgettes in a different way. For a standard dinner vegetable we like it with slices of garlic. If you fancy a courgette recipe take a look  here.

Fried Kale with Pine Nuts and Chilli

A super quick way to jazz up Kale. This recipe serves 2.

Ingredients
  • 1 cup Kale
  • 1/2 green Chilli
  • 1 clove Garlic crushed
  • 1 tbsp Pine Nuts
Directions
Step 1
Heat a tablespoon of Olive oil in a frying pan
Step 2
Toss in the Pine Nuts and fry for a minute or two until they start to colour
Step 3
Add the garlic, chilli and Kale and fry for 3-4 minutes until the Kale wilts nicely
Step 4
Serve immediately.
