Dairy Free Garlic Sauce

Garlic sauce is a fabulous addition to any meal with grilled meat, it’s also wonderful on a burger (be it  a vegan or meat variety). We also have it with hummus and grilled vegetables just to give everything a bit of a kick.  This is one of those recipes that is simple to make, and keeps for a good few days.

We also serve it with kofta’s or marinated lamb.

Now this is a strong sauce so take it easy!

Ingredients
  • 1 head of garlic
  • 1 small potato - peeled and diced
  • 2 tbsp Tahini
  • 1 1/2 tsp sea salt
  • Zest of one lemon
  • Juice of one lemon
  • 230 ml plain vegetable oil
Directions
Step 1
Break up the garlic head and peel each clove
Step 2
Zest and juice the lemon
Step 3
Peel and dice a potato
Step 4
Add the garlic, potato, sea salt, tahini, lemon juice and zest to a food processor and whizz until it’s pretty smooth. I like it with a bit of bite so I don’t make it completely smooth but you can if you want
Step 5
Then slowly add the oil while the food processor is running to make a smooth sauce
Step 6
If you want it to be a bit more mild then add in a tablespoon of plain soya yoghurt (coconut is too sweet).

Duck Skewers

BBQ Duck Skewers

The weather is fine, the BBQ is out and it’s time to pop something other than a sausage on the BBQ.  Skewers are always popular – I like to cut the meat into strips rather than chunks as it cooks more evenly. Duck is amazing on a BBQ – full of flavour and quick to […]

Coconut Chicken

Coconut Chicken and Pineapple

This is a lovely meal on the BBQ or under the grill. Cooking time is pretty short, about 15 minutes but you do need to marinate them for at least 3 hours, or even prepare them the night before.  Pineapple is a good fruit for these, as it’s solid enough to take the heat from […]
