Vegan Baking and Desserts

This is where you’ll find all our egg and dairy free baking and dessert recipes (just scroll to the bottom of the page). We’re allergic to dairy and egg and so we have to be very careful. Baking dairy and egg free is super easy, and you get some wonderful results.

We love a bit of glitter, a bit of decoration and a bit of fun along the way making great looking desserts for our allergic friends and family.

Here are a few of our favourite alternatives for replacing egg in baking:

1. Add 1/2 ripe banana to baked goods for body and moisture

2. 14 cup unsweetened applesauce is also a good moisture giver

3. Use 2 tsp baking powder plus 1 tsp apple cider vinegar to get lift in baking

4. A good binder is 1 tbsp flaxseed meal plus 3 tablespoons water

5. Use 1/4 cup oats for binding burgers and meatballs

6. I like Organ Egg replacer when an egg replacer is called for.

Aquafaba is all the rage for meringues, but of course you’ve got a lot of chickpeas to use up. I find Organ makes great meringues – just make sure you get the baking version, not the one for making scrambled ‘eggs’.

When baking dairy free:

When it comes to cow’s milk alternatives it’s really down to personal preference over taste, although please remember that Rice Milk isn’t recommended for toddlers due to the arsenic content.

Here are a few of our tips for  dairy free baking and cooking:

1. Our favourite dairy-free spread is Vitalite, although Flora and Pure are pretty good too. Naturli has the most buttery taste, consistency and look but its not safe for those with Nut allergy as it has Almond in it.

2.  I’ve never quite understood why so many vegan baking recipes call for flavourless oil! We melt margarine to add to cakes to pack in as much flavour as possible.

3. For cream substitutes we like Oatly although if you can have Soya then Alpro Cream is a good option and a more ‘cream like’ colour than Oatly.

4. Add Trex to baking cookies to make them chewier (divide the fat between Trex and Dairy free margarine).

5. Trex is best for making pastries – the dairy free margarines don’t produce a flakey enough result.

6. Violife Cheese and Daiya Cheese are great, the Daiya Mozzarella melts and is great on pizza.

7. There are lots of dairy free ice creams available. Some of our favourite brands are Booja Booja (although not okay for those with nut allergy), Coconuts, Coyo and Ben & Jerry’s Vegan Ice cream. If you fancy making your own then do use Coconut Cream, not Oatly or Soya Cream.

8. Don’t try to make a baked cheesecake with dairy free cream cheese – it doesn’t work!. Go for a refrigerated recipe. Here’s our Dairy Free Cheesecake.

9. Jus Rol makes great ready to roll pastry and pastries such has Pain au Chocolat – you may not be able to eat pastries when you are out and about but Jus Rol makes having them at home simple.
