I love cookies...or as you English folk say...biscuits. We always had a jar of homemade cookies when I was growing up and figuring out how to climb up the kitchen units to sneak cookies was an important part of my childhood! These ones are made with Gluten Free Flour so everyone can chow down on them.
Free From: Dairy, Gluten, Egg, Soya
1/2 cup Rice Dream or KoKo Coconut Milk
1/2 cup melted non dairy margarine
2 tablespoons ground flax seeds
1/3 cup brown sugar
1/2 cup granulated sugar
2/3 cup Dove's Farm White Gluten Free Flour
1/8 tsp ground cinnamon
2 tbsp cocoa powder
3/4 tsp gluten free baking powder
1/4 tsp salt
1/4 tsp xanthan gum
1 3/4 cups Gluten Free oats from Sainsbury's or Nairn's
3/4 cups vegan chocolate chips - I use Moo Free.
Preheat your oven to 350°F, or about 170°C. Line two baking sheets with parchment paper (I lightly greased the paper).
Mix together Rice Dream, melted margarine, flax seeds,brown sugar, sugar and vanilla until smooth. Sift in flour, cinnamon, cocoa powder, baking powder, xanthan gum and salt. Add the oats and chocolate chips and stir until everything is moistened.
Drop generous tablespoons of the dough about 2 inches apart onto the baking sheets. Bake for 14 minutes (mine take 10) until the cookies are slightly puffed and the edges appear dry. Cool on a baking sheets for 5 mins then move to wire racks to cool completely.
