My mother used to give me these; although we called them 'matrimonial bars' instead! Soft and chewy, they are great in lunch boxes, or when warm out of the pan. Another gem from Betty Crocker.
Mix 3 cups of cut up dates, 1/4 cup sugar and 1 1/2 cups water in a saucepan. Cook over low heat, stirring constantly for about 10 minutes or until thickened.
1/2 cup soya or sunflower margarine (I prefer Pure available at Sainsbury's and Waitrose)
1/4 cup lard (Trex)
1 cup packed brown sugar
1 3/4 cups plain flour (Dove Farms Gluten Free Mix if you're like me...)
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cup oats (Nairn's Gluten Free, or Sainsbury's Gluten Free Oats)
Prepare the date filling and allow to cool
Preheat oven to 400° F
Grease baking pan 13x9x2 inches
Cream marg, shortening and sugar
Mix in remaining ingredients
Press half the mxiture evenly in bottom of pan
Spread with filling
Top with remaining crumble mixture, pressing lightly
Bake 25 to 30 minutes or until light brown
While warm, cut into bars
