This is a bit messy to put together; your fingers get covered with breadcrumbs etc but once ready you just pop it in the oven for 20 minutes. I serve it with rice, and broccoli, green beans or salad.
4 boned chicken breasts
150 g wheat free bread crumbs or polenta
60 ml Rice Dream
1 egg worth of egg replacer made up with water
150 g wheat free flour
40 g melted Pure Sunflower margarine
Flatten the chicken breasts with a mallet
Mix the egg replacer in with the milk (use a whisk otherwise you get lumps)
Dip each chicken breast in the wheat free flour (Dove Farm is good)
Dip each breast into the milk/egg replacer mixture
Then coat in polenta or wheat free breadcrumbs.
Pre heat the oven to 220°C
Put the chicken breasts on a baking tray lined with baking paper
Drizzle melted Pure Sunflower Margarine over them.
Bake for 20 minutes, then turning over half way through the cooking time.
