Julian loves chocolate mousse - and a couple of times a year I don gloves and make mousse. This is a vegan chocolate pudding that keeps him happy and Molly loves it. Based on coconut cream it really is rich, smooth and lovely. Add a home made strawberry coulis on top and it's perfect (well...maybe add some vegan whipped cream too...).
Free From: Dairy, Egg, Soya, Gluten
100 g dark chocolate
360 ml coconut cream
1/3rd cup caster sugar or coconut sugar
1/4 cup cocoa
1 tbsp non dairy cream (I use Oately)
1/2 tsp Xanthan gum
1 tbsp golden syrup
1 tsp vanilla
1 tsp chocolate essence
400 g strawberries
1 tsp vanilla
1 tbsp caster sugar
Make the coulis first - just chop up the strawberries, add the sugar and vanilla and simmer on the stove for about 20 minutes. You can grab the potato masher and give them a bash to help it along. Taste, adjust the sugar if you want it sweeter, and cool.
Now make the pudding.
Melt the dark chocolate either in a bowl on top of a pan of boiling water, or in the microwave. If using the microwave add 1 tbsp of non dairy cream before zapping for 30 seconds.
Now...put everything into a bowl, or stand up mixer, and mix at a decent speed for 10 minutes until you've a glossy, thick pudding. Pop it in the fridge to set.
Serve with the strawberry coulis on top, or with vegan whipped cream.
