Vegan Sugar Cookies
Time for some Christmas fun. This is easy and effective. I never have the time for intricate designs so I like to go for something that is easy but still festive. Lustre spray fits the bill perfectly. You can play around with whatever colours you like, and shapes you prefer.
These cookies are great; simple, crisp, and they last for ages in a cookie jar or tin. You can just roll and cut as normal - but if you want the affect we've shown you will need to make sure that you roll them quite thin (1/8th inch) or they explode a bit and it doesn't work.
We love edible glitter spray. It adds shimmer and fun without upping the sugar content. The trick here is to make sure that you let the glitter spray dry before handling the uncooked dough or it will spread everywhere (esp on your fingers). For these we used PME edible lustre spray.

3/4 cup Dairy Free Margarine. I tend to used a mix of Flora Dairy Free Margarine and vegetable fat such as Cookeen or Trex - about half and half as I think the vegetable fat gives a more flaky texture. If you don't have any Trex or Cookeen then you can go with 3/4 cup dairy free margarine.
1 cup sugar
2 tsp egg Organ replacer (plus 4 tbs or 5 tbs water)
1 tsp vanilla
2 1/2 cups plain flour
1 tsp baking powder
1 tsp salt
2 tsp of cinnamon for a more Christmasy feel
Cream together the margarine and sugar. Whisk the egg replacer into the water until frothy and add to the bowl along with the vanilla. Mix for 1 minute.
Blend in flour, baking powder and salt - if the dough is a bit dry you an add in a bit more water.
Chill for 1 hour
Preheat oven to 400° F/200° C
Roll out dough to 1/8 inch thick. Using a largish round cutter cut out a selection of biscuits. Then using smaller shapes cut out the centre - stars, bells, trees - whatever takes your fancy. Separate the two parts carefully.
Now grab some flat plates, put some grease proof paper on top to protect them from the lustre spray. I used green, blue, gold and silver. Place the rounds, and centres onto the desired plates so you get a mix of colours. Spray the cookie dough and let dry for a few minutes or you will end up with coloured fingers!
Onto a lightly greased baking sheet place the rounds, then gently put the centres in. You'll probably need to do a bit of adjusting - I used a palette knife to plop the centers in, and then jiggled them a bit with my fingers as necessary.
Bake on a lightly greased baking sheet for 6-8 minutes or until light brown.
Cool on a wire rack.
