Christmas is the time for decorating biscuits! We end up with tins of them; all ready for family and friends dropping by. Molly loves this time of year; and seems to really enjoy having biscuits she's decorated to eat. It's a lovely family tradition to start - you really only need a few sprinkles to get going!
These are a lovely crisp cookie - we roll them quite thick (greedy) but if you prefer thin then they work that way too! The recipe is straightforward so a good one to start the little ones with. The dough really does need to be chilled for an hour so do bear that in mind.
3/4 cup Pure Sunflower Margarine - any diary free margarine will do
1 cup granulated sugar
2 tsp Organ egg replacer (plus 4 tbs water)
1 tsp vanilla
2 1/2 cups plain flour
1 tsp baking powder
1 tsp salt
Finely chopped zest of two lemons
1 tsp lemon extract
Mix together the margarine, sugar, egg replacer and vanilla until light and fluffy.
Blend in flour, baking powder, salt and water.
Chill for 1 hour
Preheat oven to 400° F/200° C
Roll out dough to 1/8 inch thick (we do 1/4 but we're greedy) and cut out into desired shapes and decorate as you like.
Bake on an ungreased baking sheet for 6-8 minutes or until light brown.
