Vegan Strawberry and Banana Muffins

These are great. Packed with fruit and perfect with a nice cuppa tea. One question? Do these count towards my five a day? Thank you Ms Cupcake!

Banana Strawberry Vegan Muffin

Preheat oven to 180° C or 350°F

Ingredients

Free from: dairy, egg, soya, 

Prep time: 25 minutes

Baking Time: About 20 mins per tray

 

4 1/2 cups self raising flour

1 tsp bicarbonate of soda

1 tsp baking powder

1 1/4 cups caster sugar

1 large over-ripe banana, mashed

1 1/2 cups Rice Dream

1 1/3 cups vegetable oil

2 tsp vanilla extract

12 medium fresh strawberries, hulled and roughly chopped

Method - A nice simple recipe

In a large bowl, mix together the flour, bicarbonate of soda, baking powder and caster sugar

Add the mashed banana, Rice Dream, oil, vanilla and strawberries. Mix together for about 10 seconds until combined. Don't over mix. It should be lumpy.

Spoon into muffin cases and bake for about 20 minutes or until a toothpick comes out clean. Cool in the tray for 10 minutes.

Make the glaze by mixing 1 cup sifted icing sugar with 2 tbsp rice dream and 1/2 tsp of vanilla. While still warm spread a teaspoon of glaze on each muffin.
