Is there anyone who doesn't like Oreo's? I doubt it. They are great. One of those classic cookies that just works. So...let's take perfection and make it even more perfect - add them to a chocolate cupcake. Waitrose sell vegan/gluten free 'oreo type' cookies so shop there if you can't tolerate whey.
For all chocolate cupcake recipes I use the basic vegan chocolate cake recipe. It really does perform everytime and is so, so easy.
Preheat oven to 170°, 350°F
1 1/2 cups self raising flour
1 cup caster sugar
1 tsp baking soda
1/3 cup cocoa
6 tablespoons melted margarine (Pure)
1 tsp apple cider vinegar
1 tsp vanilla
1/2 tsp chocolate essence (you can live without this but I do think it add depth)
1 cup water
10 crushed 'oreo' vegan cookies from Waitrose
Crush your cookies - either put them in a clear plastic bag and bang them with a rolling pin, or put them in a big bowl and crush them with a wooden spoon.
Mix together in a large bowl the flour, sugar, baking soda, cocoa (sift it in or you'll get lumps). Add in the melted margarine, vinegar, vanilla, chocolate essence and give a quick stir. Add in the water and mix for 3 minutes or so. Just enough to get rid of lumps. Now stir in your crushed cookies.
Fill muffin cases 2/3rds full and bake for 15 minutes or until a toothpick comes out clean.
Several types of icing work; chocolate or vanilla is nice. I do vanilla buttercream with 1/2 cup chopped up 'oreo' type biscuits in the icing although next time I may add chocolate chips instead. See here for the standard vegan buttercream frosting:
