Vegan Mint Choc Chip Ice Cream

Vegan Mint Chocolate Chip Ice Cream

For best results use coconut cream or Oately cream. For this one I used Oately which means it's not gluten free. I have tried making ice cream with Rice Dream milk but the results aren't as good in terms of texture. Making ice cream is a bit faffy as we have to chill the bowl for 1.5 hours, and then chill the batter for 2-3 hours so it's not a spur of the moment decision. You need to plan.

Ingredients

3 cups Oately Cream

3/4 cup caster sugar

2 tbs golden syrup

1/2tsp Xantham Gum

3 tsp mint

1 tsp vanilla

Green gel food colouring

3/4 cup Milk Free Chocolate Chips (I used Moo Free)

 

Method

Chill your ice making bowl as directed.

Whisk together the cream, sugar, syrup, xantham gum, and mint and vanilla. Add in green food colouring - I used about 1/2 tsp green gel food colouring as I prefer it to liquid ones. Basically add a little at a time until you get a colour you like.

Chill for 2-3 hours

Place in your ice cream maker and churn for 25-30 minutes. For the last 3 minutes add in the chocolate chips. The ice cream will be partially frozen at this stage but not 'hard' enough to scoop into nice round balls.

Turn out and put into a tuperwear container and put in the freezer for 4 hours.
