Orange Vegan Buttercream Icing

 

Vegan Buttercream

 

You can make a very nice buttercream icing without butter. I make mine with Pure Sunflower margarine but if you want a really thick, stiff buttercream you can go half and half with Trex Vegetable Fat.  The flavours are up to you - buttercream can take everything from coffee to orange to mint.

The method is simple and once you've a nice stiff buttercream just grab a nozzle and swirl away!

 

Prep time: 10 minutes

Free From: Dairy, Egg, Soya

 

Method

With an electric mixer cream 1/4 cup of Pure Sunflower margarine so it's light and fluffy

Add in 1 tsp vanilla extract and 2 tsp Orange Flavouring - I like orange blossom

Add in the zest of one Orange

Give it a mix.

Sift in 2 1/2 cups icing sugar and mix briefly.

Slowly add in 2 tablespoons of Orange Juice and mix until everything is smooth and you've a nice stiff icing to work with

Use on cooled cupcakes. It goes a bit hard after a day or two so I decorate the ones we're going to eat straight away and keep the rest of the icing in the fridge and decorate as I go!
