Pasta Sauce

Most Sunday's we do the traditional roast chicken. Which means we have bits of chicken left over. Not enough to be a proper meal for someone, but enough that we need to do something with it. Monday nights is now pasta night with the sauce made from the leftover chicken and whatever I can find in the fridge.

Ingredients:

1 medium onion chopped

Left over chicken shredded into bite sized pieces

If we have any of the following I chop them up and add them:

Bacon, left over ham, left over sausages.

2 cloves garlic - minced/crushed

Selection from from the fridge:

Mushrooms, black olives, green olives, slices of red pepper, broccoli, asparagus, courgette

1 carton of Oately cream (250ml).

We're not keen on tomatoes but if you like them toss a couple in or half a tin.

5/6 icecubes of homemade chicken stock, or 2/3 gulps of liquid stock.

Method (to the madness...)

Fry the onion until coloured but not browned

Add the bacon and brown, along with any other of the meat (not the chicken) that needs a bit of colour

Add in courgette, mushroom - any vegetable that needs browning.

Add the garlic and any herbs you like - we don't add oregano as it makes Molly's mouth hurt

Add the stock, cream, other veg and chicken

Simmer the sauce for 20 minutes - stirring every now and then and tasting for seasoning

Add salt and pepper to taste.
