Pacari Dairy Free Chocolate Pudding

We love chocolate in our house – and a lovely rich pudding is always popular.  Just add in vegan whipped cream, or a bit of fruit and it make it a bit more special. This pudding is made with Pacari’s Tangara 70% rich chocolate. It gives a wonderful depth of flavour for this very easy pudding.

 

Free From: Dairy, Eggs, Soya, Nuts, Gluten

 

Ingredients

2 Cups Dairy Free milk – I use Koko

¼ cup caster sugar

¼ cup corn flour

½ tsp vanilla

¼ cup cocoa

2 bars Pacari Tangara Chocolate (100g)

 

Method

Place a metal bowl over a pot filled 2/3rd of the way full with water and gently melt the Pacari Chocolate. It doesn’t take long if you break the chocolate up into smallish pieces. Put to one side.

Warm the milk with the sugar and vanilla over a medium heat to dissolve the sugar.

Take the cocoa powder and corn flour and sift into a bowl.

Add in about ¼ cup of warm milk and whisk til you have a smooth paste, and in another ¼ cup and whisk, and then another ¼ cup and whisk until smooth. Now incorporate this mixture with the rest of the milk in the pan. Whisk until smooth.

You want to have the pan on a medium heat so that the mixture thickens. You don’t want a rolling boil, but just enough heat to be close to boiling. Whisk as you go so you don’t get lumps. 

Thickened Pudding It will take about 7-10 minutes to thicken up enough to cover the back of a spoon.

Now whisk in the melted Pacari Chocolate until you have a glossy, thick pudding.

Pour into glasses, or a bowl and refrigerate for 2 hours.

Pacari Chocolate Pudding

Serve with Vegan Whipped Cream and fruit.
