Whenever we do a baked ham we always have lots of leftovers. That's part of the joy! So along with the usual pasta sauces, sandwiches and cold ham suppers we do a potato bake. Tonnes of Oately cream, layers of potatoes and ham..yum.
6 medium potatoes sliced thinly
5 big slices of ham cut up, or about two cups of diced ham
1 medium onion sliced
3 cups Oately cream
1 cup grated lactose free cheese if you can tolerate it
Preheat the oven to 170°C, 370°F
If you are in a rush you can par boil the potatoes for 5 minutes to get them moving (but only 5 minutes as otherwise they will fall apart and you will have mush). If you do this the dish takes about an hour, no par boiling and you need to count on 1.5 hours in the oven. Obviously drain the potatoes before you start to layer if you've boiled them first.
Briefly sautee the onion in a bit of olive oil, until just coloured
Put a layer of the potatoes into the dish, grind a bit of pepper onto the potatoes, add some onions, sprinkle some cheese on top, then add some ham.
Then layer more potato...and again with the cheese, onion and ham.
Top with a layer of potato.
Pour on 2 cups of the Oately cream and pop into the oven.
About 30 minutes before it's done add the final cup of cream and sprinkle some cheese on top.
I don't add salt as I find the ham is salty enough
Serve with salad or green beans.
