I love chocolate and coconut. These are lovely, crunchy biscuits that combine the two. I don't add a huge amount of coconut so it's not an overwhelming flavour, rather a hint of. The extra chocolate on the outside adds a richness so I cut the biscuits quite small but if you want them bigger then go ahead - just don't say I didn't warn you! Of course they are vegan as is everything on this site. This is an easy recipe to do; if you don't want to do the chocolate dipping then they are lovely (and a bit less rich) plain.
Free From: Gluten, Dairy, Egg, Soya
1/2 cup caster sugar
1 1/2 cup soft dairy free margarine (I use Pure Sunflower)
4 cups Dove's Gluten Free Self Rising Flour
1 tsp Xanthan Gum
1/2 cup Moo Free Chocolate Chips (or any dairy free brand)
1/2 dessicated coconut
For the chocolate coating
150 g dark chocolate
2 tbsp diary free margarine (Pure Sunflower)
Preheat the oven to 170°C, 350°F and lightly grease a baking sheet
Cream the sugar and margarine using an electric beater until light coloured and a bit fluffy (about 4 minutes)
Mix in the gluten free flour and Xanthan Gum
Add the chocolate chips and coconut and combine
The dough should be quite stiff, roll it out and cut the shapes you like. I used a 3 cm round cooking cutter and rolled the dough out to a thickness of about 1/2 cm.
Bake for 10 minutes, or until lightly brown around the edges. Do not over bake as with most gluten free baking there is a risk of the biscuits being dry if overbaked.
Cool on a wire rack.
Once cool it's time for dipping.
Melt the dark chocolate and the dairy free margarine. Do this by placing a bowl on a pan of water, bring to the boil and add the chocolate and margarine. Stir as it melts. Take each biscuit with your finger tips, by the edges, and dip the top into the chocolate. Turn over and let harden on a wire rack.
