Being Canadian, pancakes for breakfast is a must. So I've played around with my brothers recipe and here is my gluten free solution. The recipe makes a more 'cake like' pancake compared to 'normal' flour but are lovely all the same. Of course, you have to douse them in real maple syrup - none of this fake stuff!
1 cup Doves Farm Gluten Free Flour
3/4 cup Rice Dream
1.5 tbs Gluten Free Baking Powder
1/4 tsp baking soda
Pinch of salt
1tsp granulated sugar
1tbs veg oil or melted butter
Mix the dry ingredients together briefly, then add in the Rice Dream. You should end up with a batter with a good 'dropping consistency' and a few bubbles starting to show. This is the baking powder doing it's job and will make the pancakes fluffy.
This makes enough for about 6 pancakes.
Heat a frying pan to a medium heat with about 1 tablespoon of oil and drop spoonfuls onto the hot pan.
Fry until bubbles start to show through all of the pancake and the first side is light brown. The outside will bubble first, do wait for the middle to bubble a bit or you will have pancakes that are raw in the middle.
Flip over and cook the other side for a couple of minutes until the pancake is cooked through and brown on both sides.
Serve with margarine and maple syrup.
