The people at Delicious Alchemy kindly sent off a pack of brownie mix for us to try.  I’m allergic to wheat, and both Molly and I are allergic to eggs and dairy so baking things we can both eat can be a bit tricky.  So many of the gluten free products contain eggs, and a lot of mixes call for eggs for both rising and binding purposes.

I’d tried some of their other mixes with great results…see here for the vanilla cake review ….. but I’ve got to be honest and say I struggled a bit to get these right. The first time I tried marshmallow as an egg replacer and that was just wrong on all sorts of levels. So I gave the whole thing a bit of thought…and decided that I needed to reduce the amount of margarine the packaging called for, add in some baking powder, Organ egg replacer and a ¼ cup of Koko milk. Adjusting things designed to be used with eggs can be tricky so it took a couple of goes to get it right.

But then it was right…very right. My friend, Kate, is gluten and dairy free. We were visiting her for the weekend so we took the brownies with us as a ‘thank you’ and ‘let’s eat’ treat. She loved them, thought they were rich, and delicious. Molly adored them as well and I was having to fight her off as she was preferring the gluten free brownies to my vegan cupcakes (very irritating…).

But be warned – you have to really like a soft, fudge like brownie. These aren’t cakey brownies at all and they don’t rise so much. I can’t say whether they rise more with egg in them obviously. I used 75g of melted margarine, ¼ cup of Koko milk, 2 tsp egg replacer whisked with 4 tablespoons of water and 1 tsp of baking powder.
